Yoshida udon, a local specialty in Fujiyoshida City, is characterized by its strong, chewy noodles, said to be the hardest noodles in Japan. They're commonly served in thick broth with boiled cabbage and salty-sweet horse meat. Takekawa Udon is a popular Yoshida udon restaurant near Kawaguchiko Station. The extra-thick, handmade noodles here, pounded over 2 days, are distinctively chewy. For many years, locals, tourists, and anglers have enjoyed these noodles together with miso and soy sauce broth flavored with dashi stock.
