Houtou Fudou

"Houtou," a signature local dish of Yamanashi, is made with thick, chewy noodles simmered in a miso broth together with pumpkin, mountain vegetables, and other delicacies from the Mt. Fuji foothills. The flavor and richness of the ingredients come together for a rustic and hearty dish. Another treat, Houtou Fudou's special "inari" (fried tofu pockets with sushi rice inside) cooked with brown sugar, has a slightly refined sweetness that makes it especially popular. Enjoy traditional houtou while gazing out the window at the beautiful natural seasons around Lake Kawaguchi, set against the majestic Mt Fuji.
